  • Pomegranate Molasses: Fnaydek, Akkar - Pomegranate molasses is a pretty simple ingredient that is taking the world by storm; all chefs today want to include it on their menu. One of the things I appreciate most about it is its lack of sweetness. Pomegranate molasses is syrupy and rich, but even versions with added sugar are not very sweet. Instead it's tangy and a little musky with a depth of flavor that makes it invaluable anywhere you want to add a little depth or complexity.   • Barazek: Groumet Pastry SHop, Saida - Barazek are buttery, shortbread-like cookies covered with toasted sesame seeds on one side and studded with chopped pistachios on the other side. Whenever someone in Beirut makes a short trip to Damascus, bringing a few boxes of these barazek is usually comissionned from the person travelling. Burghul is a kind of dried cracked wheat.   • Turkish Delights (Raha) Saida, South - It's our latest discovery from the Saida tour. A small artisan produces a delicious Raha worth looking into. It's proudly created and produced in Lebanon. Rahat el Halkoun is a family of confections based on a gel of starch and sugar. Premium varieties consist largely of chopped dates, pistachios, and hazelnuts or walnuts bound by the gel.
